Cassava and Corned Beef Gravy

Cassava and corned beef gravy make a quick and easy African breakfast. You can have a nice meal in 30 minutes.


Here's what you'll need:

one bag frozen cassava or 2 fresh cassava roots

1 can corned beef
1 medium onion (thinly sliced)
1 tsp seasoned salt
1/2 tsp ground black pepper
1 tsp tomato paste
2 cook spoons cooking oil
1 tsp flour
2 Tbs water
1 pod chopped hot pepper(optional)


First, make your gravy:

Heat 2 cook spoons of oil in large skillet on medium high. Add flour to hot oil. Stir until well mixed.

Add sliced onions. Continue stirring until onions and flour are golden brown. Add corned beef. Break apart and mix well. Add tomato paste and mix in.

Reduce heat to medium.

Add water and optional pepper. Add seasoned salt and black pepper. Mix well.

Reduce heat to low. Simmer about 5 minutes.
