Sweet Ripe Boiled Plantains

Boiled plantains are enjoyed in all of Africa and Latin America.

They are similar to bananas. One main difference is that you cannot eat plantains raw.

That's not a problem, though. You can eat them in many tasty ways. You can boil, fry, bake, or roast them.

Most grocery stores now carry ripe plantains now. But of course, you can also find them at Spanish and Oriental stores.

Here's what to do:

The plantain must be ripe and full. Wash them and cut off about a half-inch on both sides. Then cut into two or three pieces.

Place in a deep pot. Place enough water to cover. Add a pinch of salt. Boil on the stove top until fully cooked.

They are ready when the skin splits open on the side or the plantain begins to stretch out from the ends. Drain off water and remove skins. Enjoy with margarine, butter, or gravy.
