Never had Plantain Fritters?
You will love these... especially if you like banana pancakes.
Plantain Fritters
1 C All-purpose flour
1/2 C milk
2 Tbs margarine
3 Tbs sugar
1 tsp baking powder
1/2 tsp salt
dash nutmeg
1 plantain (mashed, see Tips below for banana fritters)
(makes about nine 3-inch fritters)
Peel plantain and remove seeds from the center. Place in a pan. Add the remaining ingredients and beat just until smooth (about one minute bu hand). Use a scraper to scrape the sides of the pan if needed. Grease bottom of skillet. I use an oil spray like PAM. Depending on your stove, you should switch between medium and medium low. Heat the oil on medium initially. Sprinkle a few drops of water in skillet. If the bubbles skittle around, the skillet is hot enough. Pour about 1/2 C of batter into the hot skillet. Cook until dry around the edges and puffed. Flip and cook the other side until golden light brown.

Tips:
You can substitute bananas for the plantain. Use 2 medium bananas or 1 1/2 large bananas for each plantain. You can use evaporated milk for a nice flavor but remember to use 1/4 C milk to 1/4 C water. This is because a half of the moisture had been removed from evaporated milk.
