Fufu Sauce …with okra, bitterballs, and pepper



You can make a fufu sauce by mixing fresh okras, peppers, bitter balls, kittely and onions. Kitterly is a small bitter ball. It tends to be more bitter than the regular sized bitterball.

This makes a quick and easy pepper sauce to serve with your soup when you swallow fufu. This is a favorite side order. It is especially good if you have a cold or the flu. The spiciness acts as a decongestant. This sauce is great to spice up your food. The bitter balls add a slightly bitter taste pepper is convenient for spicing up your food.

You will need

1 lb fresh whole okra
½ lb fresh bitter balls
2 pods fresh hot pepper
1 – 2 tsp kittely (optional for extra bitter taste)
2 chicken bullion cubes (beef flavor)

Prepare your ingredients.

Cut off the ends of the okra. Transfer to a deep pot.

Cut off the stem of the bitter balls. Add to the okra. Remove the stems from the pepper and add to the pot.

Add enough water to cover the contents of the pot. Add kitterly and salt to pot. Mash bullion cube with a spoon and add to pot.

Allow to boil for about 20 to 25 minutes, or until the okra is soft and done. Test for doneness by sticking with a fork. When done, drain water. Transfer contents of pot to a metal or plastic bowl. Use a fork or potato masher to mash the okra mixture.

Enjoy with fufu and soup.


Tips

Store leftovers in the fridge. For long term storage, transfer to a plastic container and store in the freezer.
