Boiled Eddoes and Gravy for Breakfast
Boiled eddoes are eaten as a staple in Africa. This tropical root goes with margarine, butter, or gravy for breakfast.
You can find it fresh at most Oriental or Spanish stores. Some conventional grocers now carry it also. Check in the produce section.
Here's how you boil it:
Peel using a small sharp knife. Cut into 2-inch pieces. Wash and place in a deep pot. Place enough water to cover. Add a pinch of salt. Bring water to boil on the stove top. Place pieces in the water and boil until it is soft. Test by sticking a form through one of the pieces. It is ready if the fork passes through easily.
