Boiled Cassava, aka Yucca Root


Boiled cassava is made from the root of the Yucca plant. Yucca root is an African staple and is eaten boiled, fried, and roasted.

You can boil it starting with frozen pieces available at most Oriental or Spanish stores. You can also find the fresh root at most grocery stores. Check in the produce
section for yucca.

Here's what you do:

Frozen Yucca

You will need:

one bag frozen yucca roots
salt

Take the pieces from out of the plastic bag. Rinse off the ice.

Place enough water to cover your cassava in a deep pot. Add a pinch of salt. Bring water to boil on the stove top. Place in the water and boil until soft.

Test by sticking a fork through one of the pieces. It is ready if the fork passes through easily. Drain off water and enjoy with margarine, butter, or gravy.


From Raw Yucca

You will need:

2 Yucca roots
salt

Peel using a small sharp knife. Cut into 2-inch pieces. Wash and place in a deep pot. Place enough water to cover.

Bring water to boil on the stove top. Place pieces in the water and boil until it is soft.

Test by sticking a form through one of the pieces. It is ready if the fork passes through easily. Drain off water and enjoy with margarine, butter, or with gravy for breakfast.
